The temperature of my beds this morning ranged from 36 degrees to 40. Potatoes like a temp of 45 degrees or more, so I’m going to wait another week or so to plant. But it’s tough to wait. It’s the one thing I grow that my whole family loves. The buttery soft potatoes are wonderful roasted, mashed, steamed or in soup. However many we grow, it is never enough.

Potatoes are also one of the easiest thing I grow. No tiny seeds and sprouting and germinating. Just a big hearty hunk-a-spud dropped in a hole. OK, well maybe there’s a little more to it than that, but not much.
